Turkey Meatballs with Quinoa Pesto Salad

Description

When you are looking for healthy, tasty and quick mid week meals to please everyone, it's not always easy.

With different dietary habits such as gluten free, high protein, low carb or plant based. This dish will please all of these requirements. High in fibre, antioxidants, vitamin C and minerals.

Turkey is a low fat source of protein with high Tryptophan essential for producing serotonin. Serotonin also breaks down to melatonin, to ensure a good night's sleep.

Alongside quinoa complete with b vitamins and fibre to slow down the release of glucose to support circadian rhythm to kick start tomorrow morning!

Ingredients

500g turkey mince
1 tbsp grounded almonds
1/2 tsp Pink Himalayan salt
Grounded black pepper to taste
2 small carrots or 1 large carrot grated
1 tsp cajun spice
1 tbsp pesto sauce any colour
500g of Cavolo Nero or any green vegetables you have in the fridge
2 measuring cups of quinoa with 4 cups of measuring cups of water
200g or 1 small bag of radishes , sliced in 4
1 cucumber, chopped into small cubes
Extra virgin olive oil around 2 tbsp

Recipe

Add the water to the quinoa and bring to boil, then simmer with lid on for 10-15 mins until firmed.
In a large bowl mix the turkey with cajun, pink salt, black pepper, carrots and almonds.
Create small balls and pat down softly in patties to flatten them.
Heat a frying pan with the olive oil and add the patties around the pan, with space between each one. Pan fry on each side for around 4 minutes each or until cooked.

Steam green vegetables with a dash of pink salt.

Meanwhile, mix the quinoa with pesto and throw in the vegetables, along with cucumber and radishes. Serve with turkey burgers on top.
