High Protein Salad

Meal in a Salad


40gg black beans drained
2 large handfuls of baby spinach
500g tomatoes chopped into chunks
1/2 cucumber cut length ways
1 mango peeled and chopped into chunks
1 red onion chopped
8 radishes sliced
2 avocados chopped
100g feta crumble
handful of herbs for dressing (mint/coriander/basil

1 big green chilli, deseeded and chopped
1 garlic clove pressed
100ml extra virgin olive oil 2 limes juiced
2 tbsp white wine vinegar
2 tsp honey


Make the dressing by blending all ingredients in a food processor, save a few herbs for the salad if you wish or you can disguise them in the dressing.
Scatter the beans and spinach over a large platter. Arrange tomatoes, cucumber, mango, onion and radishes on top and toss together. Top salad with avocados, feta and herbs, serve dressing on the side.
