Gluten Free Chocolate Chip Muffins

Quick and easy to bake


These muffins are easy to make and your kids will love them. I always keep a few gluten free snacks in the cupboard, though I prefer to bake my own, when I have time. This batch serves around 8-10 muffins.


175g gluten free all purpose flour (Doves)
1/4 tsp xanthan gum
50g cacao powder
125g caster sugar or stevia
2 tsps gluten free baking powder
pinch of salt
1 cup of milk or plant based milk
120ml melted butter (or you can use vegetable oil/coconut oil)
1 large egg
1 tsp vanilla extract
170g of your favourite chocolate chips - mix them up with white and dark chocolate


Mix with spatula all ingredients in a large bowl
Be careful to not over mix

Fold carefully into a muffin tray either made from silicone or you can add muffin liners to a baking tray.

Heat oven to 175 deg fan assisted and place muffins in oven and bake for 10 minutes.
Reduce heat to 160 deg fan assisted and bake for a further 10 minutes

Let cool, then remove from tray.
